What does it mean, when UPS is on bypass?

When UPS in bypass mode means UPS failure and it Automatic bypass supplies power to the load by using input voltage.

Units without Bypass: Smart UPS SMC, SMT, SMX. If a fault comes one, it depends on fault severity.
The state of the UPS is either Online with Fault or will be Offline due to fault( drops load).

Units with Bypass: Smart UPSSRT and Easy UPS SRV. It can be Online with Fault, On Bypass due to Fault or Offline due to fault (drops load).
